Chef Andrew Swain from Rye Tavern was kind enough to share his Garden Fresh Cucumber Slaw recipe, perfect for summer with all of the fresh local produce appearing currently:
3 English cucumbers, sliced thin on a mandolin and julienne
1/2 Cup Apple Cider Vinegar
1 Cup Vegetable Oil
1 tbsp Cilantro
2 tsp Salt
1 Tsp Pepper
1 Tsp Sriracha
Mix everything in a bowl except oil and cucumbers. Slowly pour in vegetable oil and then toss with cucumbers.
